Blackberry Cobbler


Ingredients

  1. 2 1/2 cups fresh or frozen (thawed and drained) blackberries (do not use blueberries)
  2. 1 cup sugar
  3. 1 cup Gold Medal™ all-purpose flour
  4. 2 teaspoons baking powder
  5. 1/2 teaspoon salt
  6. 1 cup milk
  7. 1/2 cup butter, melted
  8. Cream, whipped cream or ice cream, if desired


Steps

  1. In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.
  2. In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 8-inch square pan. Spoon blackberry mixture over batter.
  3. Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with cream.

  1. A basic cobbler dough, which is like a drop biscuit, should be mixed with a light hand so it will rise up through the berry mixture and have a light texture. Mix just until the dry ingredients are moistened.
  2. Add 1/2 teaspoon of a warm baking spice—cinnamon, ginger, nutmeg, or cardamom—to the cobbler dry ingredients to add an aromatic edge. And a teaspoon of pure vanilla stirred into the berries will enhance their natural sweetness.
  3. Summer berries can take a basic cobbler beyond an everyday dessert. Try adding raspberries to the blackberries for a different flavor combination.
